Yummy Gluten Free Baking Powder Biscuits


I grew up eating Baking Powder Biscuits for breakfast and have missed them since I was diagnosed with Celiacs. Trying to just substitute gluten free flour for wheat flour in a standard recipe doesn’t work either as the biscuits are dry and dense. I finally came up with the below recipe that yields nice fluffy biscuits that make great sandwiches.

Makes 6 large Biscuits

Preheat oven to 450 deg F

2 Cups Gluten Free Flour

3 1/2 tsp Baking Powder

1 tsp Salt

5 Tbsp Frozen Grated Lard

2 Tbsp Frozen Grated Butter

1 1/8 Cup Cold Milk

In a large bowl combine the dry ingredients and whisk until fully mixed. Cut in the shortenings with a pastry knife or a fork until the mixture resembles course cornmeal.  Slowly add milk while stirring the mixture. stir just long enough to incorporate the milk and then form into a ball. Place dough ball onto a floured surface and roll out to 3/4″ thick and using a glass or a large can cut out  biscuits. Dip each biscuit in melted butter and place on an ungreased cookie sheet. Bake in a 450 deg F oven for 14-16 minutes until golden brown. Enjoy.
