Crispy and Creamy Polenta Fries


These are an excellent change from French Fries. They are crispy on the outside and nice and creamy on the inside. I like them served poutine style with cheese and gravy.

Makes 12 Cups of Polenta

3 Cups Corn Meal

5 Cups Chicken Stock

4 Cups Milk

1/2 Cup Grated Parmesan

1/4 Cup Grated Old Cheddar

2 tsp Salt

1/2 tsp Ground Black Pepper

In a large sauce pan combine all the ingredients except the corn meal and over medium high heat bring to a boil stirring constantly to avoid scalding. Add corn meal and reduce heat to medium. Stir constantly until the Polenta is fully cooked and starts to pull away from the sides of the pan as you stir. Remove from heat and spread evenly into oiled baking pans about an inch deep. Place in fridge and cool for a couple hours. remove from fridge and turn the chilled polenta out onto a cutting board and slice into fries sized pieces. Heat up a skillet with a little oil and brown all sides of your fries. Serve and enjoy.
