Brazilian Cheese Puffs (Pão de Queijo)

I discovered these little delicious Cheese Puffs while I was working in Brazil and this was before I had to go gluten free, but yay they are gluten free so I can still have them. I like these so much that I made more than 400 of them for my daughter’s wedding. I have tried many recipes for them, but they weren’t quite the same as I remembered. Finally I found a recipe for them at Simply Recipes and the only thing I have changed is the egg quantities. You will need to get yourself a mini muffin pan for these as they don’t turn out as good when baked in a regular muffin pan. I also double the recipe from the original as they fly off the cooling rack as soon as they come out of the oven

Yield: 32-36 cheese puffs

3 Large Eggs

2/3 Cup of Oil (I like to use a blend of 50/50 Olive Oil and Beef Tallow)

1 1/3 Cups of Milk (Coconut Milk can be used)

3 Cups Tapioca Flour

1 Cup Packed Grated Cheese (Parmesan is a good choice, but any hard cheese will work)

2 tsp salt

Place all ingredients into a food processor and blend until smooth. Fill mini muffin pan cups just shy of the top with batter and bake in a 400 deg F oven for 15-20 minutes or until golden brown. Remove from pan and try to get one for yourself before those around you eat them all.
