Growing up there were three major people that helped form my love of food, my mother and my grandmothers. I used to watch them like a hawk and took in everything I saw them doing. Except when baking none of them used recipes as they were all about using what was on hand. Each one of them has a dish that if I close my eyes I can taste and see them making and with my Grandma Meikle one of those dishes is her Cream of Potato Soup. I had watched her make it for years and when I was older I tried making it myself and tried many different recipes, but it was never quite right. One day I asked her to make some for me and noticed that although I had the ingredients right I was using exact measures and that made the difference. Below is a go by recipe, but don’t worry about getting the quantities exact and you’ll be happier with the results.
1.5 Cups of Chicken Stock
5 Cups Milk
10 Large Potatoes cut into dice
1 Large Onion diced
2 tsp Salt
3/4 tsp Black Pepper
Combine Chicken Stock, 1/2 the Potatoes, Salt, and Pepper in a medium saucepan and bring to a boil. Cook until potatoes are soft enough to mash. Remove from heat, add milk and using either an emersion blender or food processor blend until smooth. Return to medium heat and add remaining potatoes and onion and simmer until the potato and onion is soft. remove from heat, serve, and enjoy.
